Pumpkin Season!

First day of October is coming up just around the corner which means Pumpkins! We are already seeing many for sale at the local grocery stores. I have a love for many things pumpkin from Pumpkin Spice Lattes to Pumpkin Bread.

I have in the past talked about my love for Pinterest and have lately found amazing pages on Facebook that post up recipes as well. So here is a pumpkin related recipe for all of you to try that came up on my Facebook feed today.



Pumpkin Chocolate Chip Cookies-

Ingredients:

2 cups All Purpose Flour
1 tsp Baking Powder
1 tsp Ground Cinnamon
½ tsp Baking Soda
½ Ground Nutmeg or Pumpkin Spice
½ cup Butter, at room temperature
1 cup Packed Brown Sugar
1 Egg
1 cup Canned Pumpkin
1 tsp Vanilla
1 cup Semi-sweet Chocolate Chips

Preheat oven to 375 degrees. Grease cookie sheets.
In a large bowl, combine the flour, baking powder, cinnamon, baking soda and nutmeg, then set aside. In a mixer bowl, beat the butter for 30 seconds, then add brown sugar and beat till fluffy. Add egg, pumpkin and vanilla, beating well. Add dry ingredients to beaten mixture, beating until well combined. Stir in chocolate chips; dough will be soft. Drop from a teaspoon, 2 inches apart onto cookie sheets. Bake at 375 degrees for 8-10 minutes. Cool on a wire rack.
